Radio Taco: Sydney’s first dedicated birria taqueria opens in Chippendale
Sydney’s first dedicated birria taqueria – Radio Taco – has just opened its doors in Chippendale.
Founded by three Mexican friends, chef Aldo Lara, restaurateur Pablo Galindo (Milpa Collective), and Héctor Valles (Ola Lola Catering & Events), Radio Taco captures the spirit of Mexico’s bustling corner taquerias: small, loud, authentic, and always about one thing done right.
That one thing is birria, the rich, slow-cooked beef stew born in Jalisco. “It’s simple, we only do birria,” says chef Aldo Lara. “We cook it slow, use the best Australian beef, and stay true to the recipes we grew up with. Authentic flavours, no shortcuts.”
At Radio Taco, birria takes centre stage across a tight ‘all-killer, no-filler’ menu. Our top pick has got to be their Classic Birria Tacos – your choice of beef, chicken or mushroom birria in soft corn tortilla, onion, coriander, salsa and dipping consomé. It’s tender, it’s fall-apart juicy and it’s just ridiculously delicious.

Other highlights include their cheesy Quesa Tacos, Loaded Nachos, Birria Ramen Bowl and the top-notch Birria Burrito – another favourite with Mexican rice, chipotle beans and avocado crema all wrapped up in a flour tortilla. A super flavourful, nutrient-packed dish that will get your tastebuds singing.
There are plenty of sides too including their tasty Guacamole and corn chips, Shoestring Fries with chipotle crema and delicious Cinnamon Churros with chocolate sauce to end your meal on a sweet note. You can wash it all down with their daily-made aguas frescas which offer a refreshing taste straight from Mexico’s street corners.
Since opening, Radio Taco has seen lines out the door and daily sellouts, with locals quickly embracing its no-fuss, flavour-first approach. The 12-seat corner shop at 67 Abercrombie Street is designed for quick eats, takeaway, or a taste of Mexico in the heart of Sydney. Prices sit between $15–$23 for mains and $2–$12 for sides, making Radio Taco as accessible as it is authentic.

Behind the burners, Aldo brings experience from Gastro Park, The Dolphin, and The International, while Pablo’s Milpa Collective venues have redefined modern Mexican dining in Sydney. Héctor, a familiar face at festivals through Ola Lola Catering & Events, adds street food energy and community flair to the project.
