Darling Pavilion launches at Darling Quarter
Darling Pavilion is an exciting new venue that has just opened its doors in the buzzing heart of Darling Quarter. The expansive new Pavilion-style pub blends casual charm with Mediterranean-inspired elegance seating over 350 patrons across indoor and outdoor areas.
Featuring a light-filled space that opens onto an expansive terrace adorned with comfortable lounges, Darling Pavilion is the ideal spot for soaking up the afternoon sun with a drink in hand. The interior embraces a stunning stone bar – a centrepiece of the huge venue – sleek tiled table tops, whitewashed walls and lush greenery throughout, creating a warm and laid-back ambience, reminiscent of Santorini charm. Complete with a custom built DJ deck, Darling Pavilion promises to stay vibrant, especially when the sun goes down, offering a fusion of live music sessions and ambient beats.
Head chef, Kyle Quy (ex. Nola Smokehouse & 2007 Young Chef of the Year Award winner) has created Darling Pavilion’s laid-back menu, in conjunction with group executive chef Dean Sammut. Delivering remarkable value, the menu incorporates familiar pub classics with touches of Mediterranean-inspired dishes, welcoming everything from a mouth-watering quick bite to multi-course celebratory feasts.
Starter highlights include the Grilled Haloumi, Seared Scallops with pea & jamon, garlic crumb and mint oil, Char-Grilled Prawns, Grilled Lamb Skewers and the absolutely delectable Salmon Tartare with fennel, fried capers, herb oil and prawn crackers. Light, refreshing and super delicious.
Some of the signature dishes to look out for are the succulent Whole Roast Shoulder of Lamb, with roasted potatoes, green beans, cherry tomatoes, fried garlic, parsley and red wine jus. Flavourful Neapolitan style pizzas also come fresh out of the oven, with the aromatic Mushroom & Truffle Pizza sure to be a crowd favourite.
There are also a plethora of other options including Burgers & Sandwiches, Pasta, Salads, Schnitzel and crowd-pleasers such as the Crisp Skinned Salmon with risoni, cherry tomato, zucchini, snow pea, lemon, salsa verde and olive oil and the outstanding Grilled Swordfish with broccolini, green beans, white bean puree, sauce vierge and fried basil. A tender, flavour-packed fish that is just heavenly to bite into.
To wash it all down, the venue boasts an extensive drinks menu including signature hand-crafted cocktails using seasonal and artisanal ingredients and an expansive array of classic beers and wines.
