Shabuway has officially opened its doors in the heart of Haymarket, introducing a bold reimagining of Japanese-style hotpot in an all-you-can-eat, fully self-serve format.

The 120-seat venue is the latest addition under hospitality group Wannian Alliance — the same team behind cult-favourite buffet restaurants Butchers Buffet and Gyuniku. The launch marks a significant evolution for the group under the fourth-generation owner, James Sun, following the closure of their legacy venue, Arisun. In its place now stands a venue designed to usher in the next generation of communal dining.

The venue’s bright interiors feature clean timber tones, fresh green accents, and vegetable-themed graphics, creating an inviting atmosphere that reinforces the restaurant’s focus on nourishment and modern comfort.

The single-level layout encourages easy flow between dining areas and self-serve stations, with a mix of booth seating, indoor tables, and alfresco dining. The space accommodates a range of group sizes and is fully accessible with a step-free entry, making it the ideal venue for families, social diners, and corporate groups alike.

Blending Japanese, Korean and Chinese influences, Shabuway delivers a lighter, fresher take on the traditional hotpot experience. At the centre of each table is a yin-yang pot — allowing two broth flavours at once — and diners are invited to explore a vibrant buffet that highlights freshness, balance, and personalisation.

Led by Executive Head Chef Joanne Lee, the menu features house-made soup bases including the heart-warming Chicken & Ginseng, Japanese Sukiyaki, and Spicy Mala, alongside a wide array of sliced meats such as Wagyu MB9+ Signature Roll, Chicken Tenderloin, Pork Belly and Wagyu Brisket.

Guests can also enjoy a rotating variety of hot and cold dishes such as sushi rolls and salads, a fried platter station with options from prawns to pork and a delectable dessert station. These are all in addition to their standout DIY Bao Bun Station, which features steamed buns with fresh condiments and fillings like Smoked Duck, Spicy Pork and Bulgogi Beef Brisket.

Committed to quality and sustainability, Shabuway works with local farmers to incorporate seasonal produce across its rotating buffet. All soup bases and dipping sauces are crafted in-house, ensuring a level of freshness and flavour not often found in high-volume venues.

Pricing starts at $45.90 (Adult) & $28.90 (Child) for lunch on Monday to Thursday (or $52.90 & $32.90 on Friday to Sunday). While dinner starts at $58.90 (Adult) & $34.90 (Child) on Monday to Thursday (or $65.90 & $39.90 on Friday to Sunday).
