Solander Dining & Bar launches Bottomless Rosé Experience
Located close to the iconic Darling Harbour, lively King Street Wharf, and cultural and retail hub Barangaroo – West Hotel Sydney, Curio Collection by Hilton – is a boutique hotel offering bold designer rooms with all the expected comforts.
Designed by Australian Architecture firm Fitzpatrick and Partners, with interiors by Woods Bagot, the hotel has a modern classic design theme, featuring deep tones with marble and brass accents.
West Hotel’s lush garden atrium and bar, Solander Dining & Bar, is likely one of the first spots you’ll check out while visiting. It offers a relaxed and sophisticated all-day dining experience – you don’t even have to stay at the hotel to explore its delicious offerings.
Partnering with local Aussie suppliers, Solander Dining & Bar provide the best seasonal and sustainable meals from farm to table. For lunch and dinner, you can dig into a variety of mouth-watering snacks to share as well as favourites such as Chilli Caramel Fried Chicken, Steak Frites MB2+ and the spectacular Tiger Prawn Agio Olio E Peperoncino.

Solander Dining & Bar have also just launched a Bottomless Rosé Experience which is sure to be a hit over the coming warmer months. Against the lush backdrop of the Solander atrium, the offering includes a Rosé Spritz on arrival, free-flowing rosé or house sparkling, house wines, beers and spritzers and three shared courses from Solander Dining & Bar’s seasonally inspired menu.
The shared menu kicks off with dishes like the Salumi Misti (selected cured meats, marinated olives, sourdough), Forged by Vow’s Cultured Quail Parfait (brioche, boozy jelly, grapes, onion pickle) and the Forest Mushroom Arancini (truffled aioli, garlic flakes, parmesan) – bite-sized balls of crispy deliciousness!
The Charred Angus Rump Steak follows – a luxuriously hearty dish with crispy baby potatoes, red wine jus and rosemary that truly packs a punch. Then comes the Grilled Australian Barramundi Fillet – an absolute favourite with broccolini, sauce vierge and lemon – before the experience ends on a high with the ridiculously delicious Iced Vovo dessert.

The Solander Dining & Bar Bottomless Rosé Experience is available twice-daily from Monday to Saturday (from 12pm-3pm and 5pm-8pm). It will set you back $99 per person for 90 minutes (minimum 2 guests). With dietary-friendly options available, it’s an experience everyone can enjoy.
