The Ternary, Darling Harbour
When you think about some of the finest restaurants in Sydney, it’s not uncommon to overlook hotel restaurants in favour of stand-alone establishments. However doing so would be criminal when you consider some of the exceptional hotel restaurants that deserve just as many accolades in their own right.
One such establishment we’d put in this category is The Ternary. We recently ventured out to The Ternary for a fine dining experience like no other. Located within the famous Novotel Sydney on Darling Harbour, the restaurant has an open plan allowing diners to watch their meals be prepared on the one side while enjoying the views of the Sydney skyline on the other.
The restaurant utilises three unique dining offerings including The Ternary Bar, Asian Kitchen and Grill Kitchen. While the mains from the Asian Kitchen sounded highly appetising – Chicken Tikka Masala, Slow Braised Lamb Shoulder, Penang Prawn Curry, Rajma, Udon Noodles, Black Pepper Stir Fried Beef – we sampled a number of items from the Grill menu on our visit.
We kicked things off with some Grilled Vietnamese Betel Leaves with chicken and nuoc cham sauce. These were just the perfect starter – fresh and spicy while the betel leaves gave it a delicate yet distinctive flavour.
Before we could polish these off, the Peking Duck landed. With its steamed open bun and spring onion, we couldn’t wait to wrap our hands around these. The steamed open bun was sweet and fluffy and complemented the juicy duck slices perfectly. The spring onion added a unique aroma and a welcome spicy kick to it all.
Next up were the Tandoori Lamb Cutlets which really excited our tastebuds. These were cooked impeccably at medium and served with beetroot purée which added some extra flavour and colour to the mix. A tasty dish which did not disappoint.
But our favourite starter had to be the utterly delectable Grilled King Prawns. Perfectly combined with miso butter and black garlic, this was just heaven in our mouths. An absolute delight – tender, healthy and flavourful. A real crowd-pleaser!
Then it was time for the main. The main options are a meat-lovers heaven with Sirloin, T-bone, Tenderloin, and Tomahawk all on offer but we got to experience the Scotch Fillet. The grain-fed black angus with spinach was juicy, tender, and flavoursome. If we weren’t full before, we certainly were after devouring this one.
We couldn’t leave without sampling some of the lip-smacking dessert on offer. The Lychee Crème Brulee was our top pick with its beautiful caramel-coloured glaze on the surface and creamy interior. Fresh, rich, and highly inviting. With Apple Martini, Dark Chocolate Tart and Green Tea Matcha Mousse also available, sweet tooths are well catered for.
Our experience at The Ternary was first-rate. With its great ambience, exquisite food, top-notch cocktails, and friendly staff, there’s not much more we could have asked for.
