Baileys celebrates plant-based living with new Coffee Toffee Liqueur
Australians have officially entered their plant era. From naming their monstera to cancelling plans to check on their fiddle leaf fig, research commissioned by Baileys to celebrate the launch of the new Baileys Coffee Toffee Plant-Based Liqueur reveals that Aussies are emotionally entangled with their greenery.
To officially launch the plant-based delight, Baileys is partnering with Stanley Green Plant Shop & Cafe in Darlinghurst to host a one-of-a-kind event: The Baileys Plant Surgery. From Friday 3 October until Sunday 5 October 2025, the leafy cafe will transform into a safe space for plant parents to spill the beans over a Baileys Coffee Toffee cocktail or coffee.
This new liqueur is more than just a tasty treat; it’s a reflection of changing tastes. With 36% of Australians drinking plant-based milks monthly and 16% weekly, the Baileys Coffee Toffee launch is perfectly timed. It replaces traditional Irish cream and blends it with oat, rich coffee and buttery toffee notes for a smooth, indulgent experience that’s plant-based.
The event is inspired by both Australia’s love of plant-based milk, and the fact that over half of Aussies (56%) have accidentally killed a houseplant in the past year, with 48% blaming themselves and 22% feeling genuinely guilty. Gen Z and Millennials are especially emotionally invested, often feeling deep disappointment when their plants don’t survive. From overwatering to underwatering, to knocking a succulent off the balcony, there’s no crime too small (or big) to share at the Baileys Plant Surgery.
Guests are invited to bring in their struggling or sick sprouts for a check-up with the Plant Surgeon, while enjoying a drink from the exclusive Baileys Coffee Toffee menu. Nishant Samuel, Head of Whisky and Liqueurs at Diageo Australia, is excited to bring Baileys to those who drink plant-based.
“We’re conscious that some people can’t enjoy traditional Baileys,” says Nishant Samuel. “Well, now they can with our new Coffee Toffee liqueur. We’re thrilled to invite Aussies to try our new plant-based treat at the beautiful, leafy Stanley Green over the coming weekends.”

Locals needing some plant care and self-care are encouraged to visit Stanley Green Plant Shop & Café on the corner of Stanley & Crown Street, Darlinghurst, from Friday 3rd October to Sunday 5th October 2025. The Baileys Coffee Toffee Plant-Based Liqueur menu will be available from 12:00pm to 6pm, with cocktails priced at $12.
