INNA Lounge is a luxe new late-night bar that has just opened its doors within the beloved four-story Republic Hotel building in Sydney’s CBD.
Serving up a dose of style and nostalgia, INNA Lounge promises to elevate the bar experience with a sophisticated vibe, savoury snacks, and an inventive cocktail list.
As soon as you step inside this classy venue, you’ll instantly notice its dark, sexy interiors featuring soft leather booths, low tables, and walls adorned with a rotating selection of modern Australian artwork, creating an intimate lounge-style atmosphere for up to 70 guests.
The striking oversized marble bar is home to one of the largest Agave indexes in Sydney, with 120 to choose from, alongside a diverse range of over 400 spirits, and more than 200 wines – 60% sourced domestically throughout Australia.
Drawing inspiration from the vibrant art deco period of the 1930s, the cocktail list is to die for and features reimagined household staples and iconic Australian ingredients. The ‘Biscuit Tin’, a delightful Arnott’s Biscuit peach cobbler, is tropical, refreshing and elaborate with hints of nostalgia. The ‘Mayne Meal’, paying homage to the inventor of Milo, blends two classics (Milo and the Espresso Martini) – for a unique and flavourful experience.
Chef Derek Bell has curated a delectable selection of bar snacks that perfectly complements INNA’s cocktail menu. Enjoy sustainable caviar served with potato crisps and crème fraiche, or savour Moreton Bay bug rolls accompanied by horseradish, garlic, and sriracha. Scrumptious!
You can also snack on Inna olives marinated in citrus peel with chilli and rosemary or dive into other standouts such as the Davidson plum cured kingfish with squid ink cracker, avocado, pomelo and tobiko or the Yellow fin tempura tuna with black garlic, lemon myrtle, lotus root and salmon pearl. Simply divine! There’s even cheese and perfectly paired accompaniments to indulge in and coffee crème brulée for dessert to ensure you leave on a high.
