Brix launches limited-edition aged rum

Sydney rum in the midst of a revival – Brix launches limited-edition aged rum, with only 580 bottles up for grabs

After four years of long and patient work, Sydney distillery Brix is launching its first ever, limited-edition aged rum, with only 580 bottles up for grabs.

The release is timed perfectly with National Rum Day, 16th August 2022 and the team at Brix are encouraging Australian rum enthusiasts to raise a toast and join them to celebrate four years of hard work, through the lengthy innovation and ageing process of this super-premium small-batch rum.

The craft distillery, based in Surry Hills, Sydney, is encouraging customers to eschew big brands and instead try local producers who are producing premium small batch liquors. Brix’s limited run of this extra special rum can be purchased through the website, in select premium bottle shops, and on-site at the distillery.

Head of Operations and Collaborations, James Christopher, says: “We are excited to be at the forefront of the rum resurgence in Australia with this new release. We are excited to finally be able to release our rum to the craft spirit loving community. We want to encourage people to savour this rum neat or on the rocks to taste the delicate fruity flavours and super smooth drinking profile.”

The bold and rounded rum uses only the highest quality ingredients to deliver tasting notes including Peach, Apricot, Cherry, Rose, Honey, Almonds, Vanilla, Toasted Marshmallows, Crème Brulee, Dark Chocolate, Coffee, Cut Grass, Bean Sprouts and an umami note of Salty White Miso – a one-of-a-kind fusion of flavours.

Brix prides themselves on having sourced the best quality Australian molasses, fresh organic sugar cane, an Australian made copper still and the best quality Australian beer, wine & spirit barrels.

Australia is becoming globally renowned as a leader in the craft rum industry due to the high-quality production methods and ingredients. Brix Distillery has embodied the elevated standards of production through their methods of utilising ex-bourbon barrels, in which the bourbon stains the wood. The barrels are then sent to local stout brewery – Stockade Brewery to infuse influence from the Imperial Stout, after which they are filled with Brix unaged spirit and left to rest for a number of years.

In describing Brix Distillery, Christopher says: “In this city, rum made history, and now we’re making rum”. Rum production first started in the 19th century in Sydney, however, it is now in the beginning of a full revival in Australia, with quality leading the way.

The Brix Select Cask Series – Stout Barrel Release will be released Australia-wide in select bottle shops and bars as well as online and on-site at the distillery from 10th August, 2022

ABOUT THE HISTORY OF RUM IN AUSTRALIA: Sydney was built on rum. When the British first came to Australia, they brought with them barrels of rum on the first fleet. They were there originally to be given to prisoners, officers and soldiers in order to lift people’s spirits following the long journey. As they began to build what is now known as Sydney, they realised that they did not need money, as all items and food was provided from England. However, without money, there was no way to pay labourers for their efforts in building the government buildings. This is when the trade of rum began. Key Sydney landmarks of Parliament House, The Eye Hospital (previously nicknamed “The Old Rum Hospital”) and The Hyde Park Barracks were all paid for in rum.
