Hay St Brings Blossom Season To Sydney This Spring
Sydney’s famous jacaranda season might still be a few months away, but Hay St Market will blossom early in the CBD this spring, with Hay in Bloom taking over the precinct all September long.
For one month, Hay St Market will come alive with floral installations, spring-inspired food and drinks, live entertainment and events, giving Sydneysiders a colourful new reason to visit.
The month-long celebration will also coincide with Negroni Month x Campari, with a dedicated collection of spring-inspired Negronis and spritzes available throughout September, featuring seasonal flavours including elderflower, mandarin, saffron, basil, cucumber, blueberry and butterfly pea.
Food lovers can expect spring-inspired dishes across Hay St’s traders, from Paddy’s Patisserie’s Vanilla Elderflower Crème Brûlée and Spring Floral Cupcakes, to Pasta e Basta’s Ravioli di Primavera with spinach, ricotta, spring peas, broad beans and mint, alongside Strawberry & Rose Tiramisu from Dolci & Co and Watermelon & Mint Sorbet from Scoop & Sons.
Hay St’s weekly entertainment line-up will also get a spring refresh, with Salsa en la Calle continuing every Wednesday, Thursday nights bringing live line dancing to the Main Stage, Friday nights introducing a new R&B residency with Suite AZ and DJ Jooce, and Latin Nights – Block Party moving to Saturdays.
Thursday nights will kick off in style from 17 September 2026, with Hay St launching its new line dancing nights on the Main Stage. The launch party, sponsored by Monster Energy, will feature Happy Hour from 5–9pm and food specials from $5, giving guests plenty of reason to grab their mates and hit the dance floor.
A key date for the diary is Thursday 24 September 2026, when Hay St will launch its new Hot Wings Challenge. The monthly activation will bring food, competition and entertainment together, giving guests the chance to put their spice tolerance to the test.
Then, from Friday 25 September, Hay St will turn up the R&B, with Suite AZ taking up residency alongside DJ Jooce, bringing live music and good vibes to the precinct every Friday night.

– Hay in Bloom: All September, with floral installations, spring styling, seasonal food and drinks and unexpected visual moments throughout Hay St.
– Hot Wings Challenge: Launching Thursday 24 September, with the new monthly challenge bringing a spicy dose of competition to Hay St.
– Negroni Month x Campari: A collection of floral and spring-inspired Negronis and spritzes, including the saffron and mandarin-infused Golden Hour and herbaceous Green Garden.
– Salsa en la Calle: Every Wednesday throughout September.
– Thursday Nights: From Thursday 17 September, live line dancing will take over the Main Stage, with the launch party sponsored by Monster Energy, Happy Hour from 5–9pm and food specials from $5.
– Friday Nights: From Friday 25 September, Suite AZ will become Hay St’s resident R&B band, alongside DJ Jooce.
– Latin Nights – Block Party: From Saturday 19 September, Latin nights move to Saturdays for a weekend dose of music and dancing.
