Prefecture 48 is a stunning new Japanese dining hub that recently opened its doors in a heritage-listed building on Sussex Street.
The precinct houses six unique venues inspired by the richness of Japanese culture. There are four restaurants, an exclusive bar, a patisserie, and a courtyard for events, all curated by Sydney’s leading hospitality group, Azabu Group.
Every corner of the precinct is thoughtfully designed to showcase exquisite art forms and vibrant movements that define Japanese cuisine. Each venue is meticulously crafted based on its unique character, embodying a deep commitment to presenting Japan’s authentic cultural essence on a global platform.
The courtyard recently held its special $1 Yakitori offering where guests got to enjoy an array of traditional grilled skewers for a ridiculously affordable price. These top-quality cuts of chicken, beef, seafood, and vegetables are all grilled over traditional binchotan charcoal for rich, smoky perfection. This distinctive blend of fine dining and affordable pricing makes the precinct an ideal spot for after-work gatherings, date nights, and mid-week celebrations.
Located just footsteps away on the ground floor is Ibushi – the vibrant and energetic robata restaurant within the precinct. Ibushi is named after “smoke” which resembles all stages of fire. The menu highlights the art of cooking over fire, delivering dishes with a smoky, charred essence.
The golden wire ribbons suspended in the air mimic the intricate, ever-changing movements of the grill’s smoke as it rises and weaves an immersive spectacle of light and shadow. The cuisine pays homage to the lively Tokyo streets and social gathering spots after dark where you can escape real life for an evening of soulful food, playful drinks and good music all night long.
The venue is headed by Executive Chef Takashi Yamamoto who has over two decades of experience in the industry. He leads the robata cuisine with Head Chef Chris Kim whose impressive career includes pivotal roles at Funda Sydney, Tetsuya’s, Mjolner, and SEPIA. At Ibushi, he continues to push the boundaries of flavour and creativity, offering an extraordinary dining experience that celebrates the art of robata grilling.
Starter highlights on the menu include the Charcoal Grilled Flatbread with Whipped Kombu Curd, Oyster with Sushi Vinaigrette, Jumbo Grilled Oyster with Mentai and Guanciale, Prawn Skewer with Umami Crumb and Sudachi Gel and the absolutely delectable Tuna Tartare with Yuzu Kosho, Crispy Sushi Rice and Avruga. A refreshing delight that’s super light – and as a starter should – whets the appetite for what’s to follow.
Some of the other highlights to explore include the Beef Tartare with Confit Yolk Emulsion, Mustard Leaves and Lotus Crisps, the Snapper with Shiso, Bergamot Oil, Pickled Kohlrabi and Burnt Citrus Salt, Ikura Don with Salmon Zuke and Wasabi Foam and the crowd-pleasing SA Calamari with Peas, Asparagus and Nori Dressing which is just packed full of flavour (and healthy too)!
When it comes to the mains, the Duck is hard to top with Sansho Pepper, Plum Soy Glaze, Radicchio and Beetroot while the Market Fish also never disappoints with Sumiso and Baby Green Shallot. Wash it all down with some fine wine or a cocktail from their extensive drinks list to end your night on a high.
If visiting for lunch, Ibushi have just launched a ‘Lunch Banquet’ – a perfect midday option for corporate gatherings, offering fire-driven robatayaki flavours in a refined yet dynamic setting. With an open charcoal grill adding to the ambiance, Ibushi creates a vibrant yet sophisticated atmosphere, perfect for networking or team bonding in the heart of Sydney’s CBD.
