Sydney’s CBD is set to embrace a new chapter in its nightlife narrative with the opening of Brooksy, an intimate hidden speakeasy that whisks patrons away to the exuberant era of the 1920s.
Tucked away from the hustle and bustle of George Street, Brooksy’s discreet entrance evokes the allure of the prohibition era for those seeking an evening of sophistication and intrigue. Velvet draped curtains, marble counters and chic art deco interiors are complemented by green accents; a nod to the bar’s signature absinthe cocktail served in a dazzling absinthe fountain.
Curated by award-winning beverage director Brendon Hill, Brooksy’s cocktail list takes city-slickers on a journey across continents during the golden age of travel, where each sip is an adventure waiting to be unfolded. Must-try cocktails include Uluru, a refreshing glass that will take you to the untamed beauty of the outback with a concoction of green grapes, lemon, Campari, gin and white vermouth. Or set sail to the sun soaked Amalfi Coast with Saluti, the epitome of elegance – house-made citrus cello, peach granita and prosecco mingled in a harmonious dance.
Brendon Hill was crowned Australia’s Cocktail Champion in 2014 and has been redefining Sydney’s beverage experience at the likes of The Grounds of Alexandria and Duck Duck Goose. Now at Broosky, Hill has stirred up an impressive cocktail menu with labels and elements inspired by his travels through Melbourne’s hidden laneways, to the rolling hills of Tuscany.
At the helm of Brooksy’s snacks menu is Executive Chef, Hemant Dadlani, whose career spans over two decades and seven countries. With stints at the much acclaimed exclusive Rosewood Hotels, British Virgin Islands, among others.
The approachable menu features standout dishes like Glacier 51 Toothfish, served in a shiro miso and a cucumber salsa to pair, Salmon with pickled fennel, capers in a delicate croquant, and a variety of snacks made to share.
There’s more to discover at this hidden gem, with exclusive offers such as premium whiskeys served throughout the venue on a bar cart, oysters shucked and served at your table and hidden offerings and giveaways throughout the bar for those looking closely for clues. Live entertainment is rich and varied, from fortune telling to palm reading, offering glimpses into the future with a nod to the past.
The cosy 55-seat venue, designed by Like Minds (formerly known as Guru Projects) is located on Jamison Street with a semi-hidden entrance, offering a mix of bar and table seating available for reservations and walk-ins.
