After years of working at McDonald’s from age 14 and later in digital and brand marketing at Red Rooster, Estephan entered the charcoal chicken space in 2021. What he found was an industry plagued by dry chicken, inconsistent quality, and brands that had lost their care. Char’d was his response: a bold, unapologetic brand built on obsessive attention to detail and genuine pride in the product.
The menu at Char’d revolves around charcoal chicken that’s marinated for 48 hours, slow-cooked over real charcoal, and never held for more than 15 minutes. If it’s not fresh and juicy, it doesn’t leave the kitchen. This non-negotiable standard extends across the entire offering, which includes burgers, fried chicken, tenders, wings, wraps, loaded chips, and family packs. Individual items start at $13–$14, with the option to upgrade to a meal for $8. Shared meals average $55–$65, comfortably feeding four or more people. Everything on the menu, from the house-made garlic sauce and dips like hummus and baba ganoush, to the signature Char’d Chicken Salt, is developed in-house by Estephan and his team.
What sets Char’d apart is its refusal to compromise. The fried chicken and tenders are marinated for 12 hours and cooked fresh to order, never sitting in warmers or pre-fried in bulk. The marinades, sauces, and seasonings are all made from scratch, creating layers of flavour that competitors simply don’t match. Even the packaging reflects this attention to detail, designed to feel premium from start to finish, reinforcing that every element has been considered.

The brand’s ethos is rooted in Estephan’s values. Raised with strong faith and a deep connection to the church, he leads with humility, discipline, and integrity. Starting Char’d required a significant personal sacrifice. Estephan invested every cent of his savings, putting plans to propose and buy a house on hold to pursue his vision. It was a leap of faith, both financially and emotionally, but one that has built a brand people trust.
The charcoal chicken category has deep roots in Lebanese culture, something Estephan grew up with. His family ate charcoal chicken weekly, but over the years, he watched standards slip across the industry.
