Sydney’s most indulgent and sustainable seafood experience, the Seafarer Dinner, has been reimagined at Hyatt Regency Sydney’s Sailmaker Restaurant. A celebration of sustainability, the Seafarer Dinner highlights the importance of eco-friendly dining, featuring the finest seafood from Australia and New Zealand, sourced from responsible fisheries and local producers.
The elevated three-course experience is crafted by Executive Chef Sven Ullrich and perfectly embodies Hyatt’s ‘Food. Thoughtfully Sourced. Carefully Served.’ philosophy. Ullrich has been a key figure in Hyatt Hotels since 2000 and oversees three full-sized commercial kitchens, five food and beverage outlets, over 4,000 sqm of event space, and 878 guest rooms and suites.
Diners can choose from an array of entrées for the three-course experience. From ocean to plate, expect Fremantle Octopus, Skull Island Prawns, Ulladulla Yellowfin Tuna and the spectacular Abrolho Island Scallops which are tender, sweet and succulent. Another highlight is the sustainably raised Kingfish from Clean Seas in Spencer Gulf with its firm yet delicate texture and fresh, clean flavour.
Mains from the chef’s curated menu include the absolutely delectable Ora King Salmon with gremolata, brussels sprouts and mango habanero salsa, Barramundi from Humpty Doo farm in the Northern Territory, and Murray Cod from Aquna – a premium sustainable pond-grown Murray cod farm in the Riverina, New South Wales.
Other standouts include the delicious Sea Mullet with kipfler potato, grapes and romesco, Swordfish from Merimbula, the Rocky Point Grouper and the flavour-packed Red Emperor with potato gratin, fish jus and fennel – firm, flaky and just so super scrumptious! There’s even an unlimited Mediterranean tapas table which you can graze from throughout the night.
Leaving room for dessert, a sweet trolley sees mouth-watering desserts prepared and served table side – from classic favourites like Orange-Cinnamon Brûlée, to enchanting flavours like Key Lime Panna Cotta. Must-try’s include the The Banoffee Tart with salted caramel, coffee cream and banana crisp, the Ube Flan with nata de coco, coconut crisp and gold leaf and the Mixed Berry Cheesecake with fresh berries, almond oat crunch and mascarpone cream – fresh, vibrant and just finger-licking good!
