Well known for its exceptional seasonal and sophisticated seafood-driven menu, Flying Fish is the latest restaurant to join The Star Sydney’s signature dining portfolio. Flying Fish deliver a first-class experience in a deluxe space referencing nautical stylings with an added sense of theatre. A series of striking hand-blown, caviar-inspired pendants illuminate the room with mixed metallics adding drama, softened by velvet banquettes and leather seating. Ocean-inspired macramé sculptures and a bespoke carpet drawing on cartography of the NSW coastline add a final touch of Sydney to the space.

Influenced by fresh spring greens and local, seasonal produce, they have just debuted their new menu to reflect the new season. For the first time ever, Flying Fish has a dedicated pasta section with three kinds of seasonal seafood pasta: Goolwa Pipi Tagliatelle with chilli and bottarga, Buffalo ricotta Tortelloni with roast onion brodo and Eastern rock lobster spaghetti with tomato and tarragon.

But before diving into the mains, you will absolutely want to experience some of the amazing lighter dishes on offer. From the raw bar, there are Appelation Oysters, Marinated Tuna, Cold Poached Prawn and the outstanding Sashimi Selection – delicious portions of Hiramasa kingfish, Petuna ocean trout, Yellowfin tuna, and Bay of fires short spine sea urchin. Incredibly fresh and a great way to start your feast.

We highly recommend adding something from the entrée menu as well to get those tastebuds rolling. The BBQ Rottnest Island Scallops with fish fragrance are a stand-out with a delectable smokey flavour – top class! You can’t go wrong with the Grilled Southern Calamari with edamame and squid ink butter either. Firm yet tender, they’re the ultimate appetiser before your main hits the table.

And when it comes to the mains, seafood is king at Sydney’s freshest seafood institution. From Mud Crab and Eastern Rock Lobster to Caviar, there is quite a selection of mouth-watering dishes to choose from. They have also updated their Seafood Platter – a share-style option to keep things sociable – with produce sustainably and locally sourced from Australia and New Zealand. A must-try and definitely insta-worthy!

The fish here is exceptional. From Steamed Snapper to the Pan Fried Petuna Ocean Trout with poached white asparagus and gribiche, you will literally be licking the plate clean after polishing them off. But the deliciously cooked Cone Bay Barramundi with braised borlotti, broad beans and Tuscan kale gets our top pick – crispy on the outside, tender on the inside, and enormously satisfying to devour.

And you cannot leave before getting into some of the dessert. Highlights include the Manjari Chocolate Mousse with Honeycomb icecream and the refreshing Strawberry with cultured cream and macadamia – a heavenly combination that will go down well in summer.

Flying Fish are certainly onto a winner bringing some of the freshest seafood and seasonal produce to Sydneysiders. Before your next trip to The Star, do yourself a favour and book in a visit.
